squash risotto
Ingredients
1 medium squash (about 500g), peeled, deseeded & cut into 1cm cubes
Olive oil
1.5 litres vegetable stock or squash stock (see above)
1 onion, finely chopped
2 garlic cloves, finely chopped
300g risotto rice
Splash white wine or vermouth
2-3 tbsp butter, to serve
2 tbsp Parmesan, grated, & extra to serve
Salt & pepper
Preparation
Try using the squash seeds and pulp to make a vegetable stock, great for squash soups or added to your risotto stock. Just put the scooped-out seeds and fibres into a pan, cover with water and bring to the boil. Simmer for 30 minutes, then strain.

Preparation
- Sweat the squash cubes in olive oil in a large covered saucepan until tender (about half an hour). Season. Heat up the stock to simmering point in a pan.
- In a separate large, heavy-based pan, heat the oil, then add the onion and garlic, and cook gently for about 5 minutes, until softened.
- Add the rice, stir until well coated and cook gently for a few minutes more. Add the wine or vermouth and cook until absorbed by the rice.
- Now add squash and stir gently for 2 minutes. Add just enough of the simmering stock to cover the rice and stir well. Keep gradually adding stock, a ladleful at a time, stirring constantly. It’s important to keep the rice at a gentle simmer and allow each addition of stock to be absorbed before adding more.
- After about 15–18 minutes, when the rice is tender but still has a little bite, remove from the heat. The risotto should be a bit sloppy. Finally mix in the butter and the cheese and serve with more Parmesan for the table.

2 teaspoons of thyme
½ cup of green onions, chopped
1 cup of beef broth
¼ cup of unseasoned bread crumbs
3 tbs soy sauce
1 egg, beaten
Instructions
1 package of Pepperidge Farm® Puff Pastry, thawed
1 tablespoon of olive oil
1 pound of lean ground beef
1 small red onion, chopped
2 habanero peppers, seeded and finely chopped
2 teaspoons of seasoning salt
6 cloves of garlic, minced
1 tablespoon of crushed red pepper
2 teaspoons of curry
2 teaspoons of thyme
½ cup of green onions, chopped
1 cup of beef broth
¼ cup of unseasoned bread crumbs
3 tbs soy sauce
1 egg, beaten
Instructions
- Heat 1 tablespoon of olive oil in a large saucepan over medium heat.
- Add the ground beef and chopped onions, and cook until the beef has browned. Drain any excess liquid from the meat.
- Add in the habanero peppers, seasoning salt, garlic, crushed red pepper, curry, thyme, and green onions. Saute for 2-3 minutes.
- Add in the breadcrumbs, soy sauce, and beef broth and simmer on medium heat until the majority of the liquid has evaporated, 7-10 minutes. The filling should still retain some moisture.

- Preheat oven to 400°.
- Roll out your puff pastry sheets and cut each sheet into 6 squares.
- Add 1 tablespoon of the beef filling to the center of the squares; then fold the puff pastry over and seal by pressing down the corners with a fork.
- Brush each patty with the egg wash, and bake for 15-20 minutes until the outsides of the turnovers turn golden brown and flaky.
- Serve hot!

puff puff
Prep time: 2 hours 5 mins
Cook time: 5 mins
Total time: 2 hours 10 mins
Serves: 4-8
Ingredients
3.5 cups of all purpose flour
1 packet of Active Dry Yeast
¾-1 cup of sugar
¼ tsp of nutmeg
1 tbsp salt
2 cups of warm water
Vegetable oil for deep frying
Instructions
1. In a small bowl, mix the yeast, sugar, nutmeg, salt, and warm water together. Set aside for 5 minutes.
2. Gradually begin to add the water mixture to the flour. Mix together by hand. The consistency of the mixture should resemble a thick pancake batter. Adjust the amount of water as necessary. **
3. Cover the mixture with a tea towel, and store in a cool, dark dry area while the mixture begins to rise for about 1-2 hours.
4. Add vegetable oil to a large pout, about 3 inches high. Heat over medium flame.
5. When the oil is hot, drop the batter either by hand or with a spoon into the oil.
6. Fry for 3-5 minutes, until the dough is a golden brown color. The ball should rise to the top, and you may need to flip it so the other side can cook.
7. Remove the balls with tongs or a slotted spoon and place on paper towels to absorb the oil.
8. Sprinkle with powdered sugar (not traditional) or serve as is.
Notes
1. Too much water will make the balls less dense. For dense balls use less water. You can adjust to your liking.
2. The amount of time it takes for the batter to rise varies. Some say that you should not let the batter sit for more than one hour or the outcome will result in a chewy consistency. When I use active dry yeast I find that allowing the batter to sit for about two hours is just fine.

How do we bring more and more people into opportunity and success and feeling hopeful about their lives ... I said as much as we've done with laws and ending "don't ask don't tell" etc., changing hearts and minds, I don't think anybody's been more influential than you on that. I really mean so. Your courage and you're just really likable and so you being willing to claim who you were then suddenly empowers other people and then suddenly it's your brother, it's your uncle, it's your best friend, it's your co-workers and then attitudes shift and the laws followed but it started with folks like you.

That's what I've always been fighting for - making sure that people love themselves for who they are, and we don't pick on people because we're uncomfortable with ourselves, or who they are. That's been my message, from when I was young to now. There are lots of young girls out there who are struggling with their identities... afraid of being discriminated against or teased. I take risks and use my imagination so that other people will feel free and take risks. That's my hope.

What if this election is a blessing in disguise? Why? Because people don't change when they're comfortable. If we had gotten a candidate that made us comfortable, it wouldn't have made us change, it would have us sleep. And it is time to wake up from some very deep illusions. Illusions like we can push a button every four years, get a sticker and then go home, and binge watch an episode of "Game of Thrones", and our civic duty is done. No.

People don't change when they're comfortable. True. Maybe that's the ingredient I need.

How to set the Flickr cover photo
ZimmermansWay:
I've been using this as a workaround:
1. Create a 2048 x 768 (72 dpi) image. Fill with black.
2. Crop your cover photo to 2048 x 402.
3. Paste and center the cover photo onto the black background created in step 1.
4. Save as JPEG and upload to Flickr.
Here are some examples:

Do you know why most self confidence building advice fail?
Because they are not based on correct psychological concepts.
I know how hard it feels when someone finds that he lacks confidence, because i have been there, and when i managed to get over my insecurities i wanted to transfer my knowledge to others so that they can become more confident.

And, still, I've struggled with this self-knowledge. truffes au chocolat
Ingrédients pour environ 60 truffes
250 g de chocolat noir à pâtisser
100g de beurre doux
2 jaunes d'oeuf

I said, "The reason I can stay in here in front of you guys and feel extremely comfortable with my decision is because, man, I gave my soul to this game. There was nothing more I could give. Nothing. " And I said, "If you guys feels like that at the end of your career, you will be just as comfortable as I am. But I'm telling you it goes by fast. And if you don't give it your all, you going to regret it. You are absolutely going to regret it. And don't be that guy. Get yourself in the gym, work as hard as you possibly can" and hopefully they got message.

I believe that when you're up against a challenge, you have to push yourself to the limit. You have to push yourself until you see what your limits are and you see what you're capable of doing and what you're capable of not doing. Sometimes, you push so hard that you break. But then, when you break, you see what you're made of yet again because you have to rebuild yourself again. But I'd never be able to forgive myself had we not made the playoffs. If I did not push as hard as I could have, I would never know how much I had left in the tank, and I would never be able to forgive myself for that.

Elaine Konopka | Caspar Schjelbred
-- Elaine Konopka
In this article, Caspar touches on various subjects, notably fear and the difficulty of accepting oneself.
It is loaded with lots of useful quotes:
TAB: While improvising, I’ve noticed that negativity comes more easily and spontaneously to many people (including myself) than acceptance and agreement. Any idea why that is?
CS: Yes. Fear.
---
CS: When you’re afraid, the default response is to say no and to close down and become smaller, occupy less space, disappear….
---
TAB: Yes! Absolutely. One of the main realizations I’ve had in your classes is how difficult it is to really see, hear, and respond to the person you’re “playing” with. We’re so busy with what we’re going to put out there that we cut off our awareness of what’s going on around us. I trace it back to fear: being afraid to not be funny, to not know what to say or do….
CS: Exactly. The great tragedy of improv is that most improvisers don’t understand that they are, in and of themselves, the fundamental “offer.” So people practice coming up with stuff and get very good at it. But as far as I can see, it’s futile. Most people can’t stand being on stage and being looked at for even five seconds without having to say or do something.
---
TAB: So what do you teach about handling this fear?
CS: You have to first simply acknowledge it. Not be ashamed of it. It’s really about accepting yourself, your presence in the world. I am what I am and what I am is here. In front of you. Being in your body is the answer. Feeling yourself. That’s what we call stage presence, charisma.
---
CS: The way people improvise reflects how they are in life, to a high degree. I don’t see a lot of patience in improv. It’s very rare. There are a couple of guys here in France who do a show called “SLOW.” They really take their time. It’s not that nobody else does it, but it’s rare.
---
CS: An issue in improv is that people are too polite, too socialized if you will, and adapt too quickly to “society,” i.e. their fellow actors. Personally, I am getting better at making people meet me on my turf. But that sure as hell did not come from improv. That came from working with Ira.

Get your testosterone up. Get your cortisol down. Don't leave that situation feeling like, oh, I didn't show them who I am. Leave that situation feeling like, I really feel like I got to say who I am and show who I am.

I realized that she had not just faked it till she made it, she had actually faked it till she became it. So she had changed. And so I want to say to you, don't fake it till you make it. Fake it till you become it. Do it enough until you actually become it and internalize.

I was so afraid of being found out the next day that I called her and said, "I'm quitting." She was like, "You are not quitting, because I took a gamble on you, and you're staying. You're going to stay, and this is what you're going to do. You are going to fake it. You're going to do every talk that you ever get asked to do. You're just going to do it and do it and do it, even if you're terrified and just paralyzed and having an out-of-body experience, until you have this moment where you say, 'Oh my gosh, I'm doing it. Like, I have become this. I am actually doing this.'" So that's what I did. Five years in grad school, a few years, you know, I'm at Northwestern, I moved to Harvard, I'm at Harvard, I'm not really thinking about it anymore, but for a long time I had been thinking, "Not supposed to be here."

Match-to-match, the question that materializes time and again out of that fog of unforced errors and poor footwork is: "Will Serena come out of it, find her game, win again?"
It often appears that she's running on fumes, and perhaps in some ways that's true. But she is a woman of remarkable physical and emotional strength and will, and if that isn't enough, there's always that ability to exercise the equivalent of the nuclear option: that magnificent serve.

If you are interested in something, you will focus on it, and if you focus attention on anything, it is likely that you'll become interested in it. Many of the things we find interesting are not so by nature, but because we took the trouble of paying attention to them.

I was so terrified that I could barely open my eyes on stage and I was grabbing onto the mic stand for dear life as the one thing between me and the audience. If you are a guitar player you have this thing in front of you it sort of feels like a security blanket. But if you are a singer, you don't have that. So it was hard, and it was very stressful, but again there was something about it that just felt like I was releasing a part of myself that was not able to be expressed in any other place.

When you are a musician, when you are a singer, or whatever, you start out imitating the people that you love. And through that process, you find your own thing to do. So I definitely borrowed a lot from the people that I admired, Etta James, and Al Green, and all those people, but then you also bring something of your own to it.

Just to have that kind of confidence and that kind of swagger, I wanted to be that and I wasn't that. But I was very attracted to it and if I could sort of fake my way into that as I was performing a blues song on stage, then I could kind of pretend to be that. And it was exciting to me ... I think after a while I was able to kind of own that a little bit more.

Le plus grand ennemi de l'homme, c'est la peur - qui apparaît sous des formes aussi diverses que la honte, la jalousie, la colère, l'insolence, l'arrogance... Quelle est la cause de la peur ? Le manque de confiance en soi.

Have you changed your mind? Have you learned stuff about your body from all this technology?
Yeah, with all the different wearable technology, and the way we're analyzing how players move -- it's valuable information when it's used the right way. I try not to think about it when I'm on the court, like, "Oh, my release felt half-a-second slow that time." Or: "I didn't create enough force on that crossover."
But when I'm working out in the summer, being able to analyze the different ways I move, and making it more efficient and explosive -- that all has provided dividends, for sure. It helps. But when you're on the court, you want to be free. You want to react to what's in front of you, and not be all clogged up in your head.
