squash risotto

Ingredients

1 medium squash (about 500g), peeled, deseeded & cut into 1cm cubes
Olive oil
1.5 litres vegetable stock or squash stock (see above)
1 onion, finely chopped
2 garlic cloves, finely chopped
300g risotto rice
Splash white wine or vermouth
2-3 tbsp butter, to serve
2 tbsp Parmesan, grated, & extra to serve
Salt & pepper

Preparation
  1. Sweat the squash cubes in olive oil in a large covered saucepan until tender (about half an hour). Season. Heat up the stock to simmering point in a pan.
  2. In a separate large, heavy-based pan, heat the oil, then add the onion and garlic, and cook gently for about 5 minutes, until softened.
  3. Add the rice, stir until well coated and cook gently for a few minutes more. Add the wine or vermouth and cook until absorbed by the rice.
  4. Now add squash and stir gently for 2 minutes. Add just enough of the simmering stock to cover the rice and stir well. Keep gradually adding stock, a ladleful at a time, stirring constantly. It’s important to keep the rice at a gentle simmer and allow each addition of stock to be absorbed before adding more.
  5. After about 15–18 minutes, when the rice is tender but still has a little bite, remove from the heat. The risotto should be a bit sloppy. Finally mix in the butter and the cheese and serve with more Parmesan for the table.
Notes
Try using the squash seeds and pulp to make a vegetable stock, great for squash soups or added to your risotto stock. Just put the scooped-out seeds and fibres into a pan, cover with water and bring to the boil. Simmer for 30 minutes, then strain.

Ingredients

1 package of Pepperidge Farm® Puff Pastry, thawed
1 tablespoon of olive oil
1 pound of lean ground beef
1 small red onion, chopped
2 habanero peppers, seeded and finely chopped
2 teaspoons of seasoning salt
6 cloves of garlic, minced
1 tablespoon of crushed red pepper
2 teaspoons of curry
2 teaspoons of thyme
½ cup of green onions, chopped
1 cup of beef broth
¼ cup of unseasoned bread crumbs
3 tbs soy sauce
1 egg, beaten

Instructions
  1. Heat 1 tablespoon of olive oil in a large saucepan over medium heat.
  2. Add the ground beef and chopped onions, and cook until the beef has browned. Drain any excess liquid from the meat.
  3. Add in the habanero peppers, seasoning salt, garlic, crushed red pepper, curry, thyme, and green onions. Saute for 2-3 minutes.
  4. Add in the breadcrumbs, soy sauce, and beef broth and simmer on medium heat until the majority of the liquid has evaporated, 7-10 minutes. The filling should still retain some moisture.
  5. Remove from heat, and set aside to cool completely.
  6. Preheat oven to 400°.
  7. Roll out your puff pastry sheets and cut each sheet into 6 squares.
  8. Add 1 tablespoon of the beef filling to the center of the squares; then fold the puff pastry over and seal by pressing down the corners with a fork.
  9. Brush each patty with the egg wash, and bake for 15-20 minutes until the outsides of the turnovers turn golden brown and flaky.
  10. Serve hot!

Cook time: 5 mins
Total time: 2 hours 10 mins

Serves: 4-8

Ingredients

3.5 cups of all purpose flour
1 packet of Active Dry Yeast
¾-1 cup of sugar
¼ tsp of nutmeg
1 tbsp salt
2 cups of warm water
Vegetable oil for deep frying

Instructions

1. In a small bowl, mix the yeast, sugar, nutmeg, salt, and warm water together. Set aside for 5 minutes.

2. Gradually begin to add the water mixture to the flour. Mix together by hand. The consistency of the mixture should resemble a thick pancake batter. Adjust the amount of water as necessary. **

3. Cover the mixture with a tea towel, and store in a cool, dark dry area while the mixture begins to rise for about 1-2 hours.

4. Add vegetable oil to a large pout, about 3 inches high. Heat over medium flame.

5. When the oil is hot, drop the batter either by hand or with a spoon into the oil.

6. Fry for 3-5 minutes, until the dough is a golden brown color. The ball should rise to the top, and you may need to flip it so the other side can cook.

7. Remove the balls with tongs or a slotted spoon and place on paper towels to absorb the oil.

8. Sprinkle with powdered sugar (not traditional) or serve as is.



Notes

1. Too much water will make the balls less dense. For dense balls use less water. You can adjust to your liking.

2. The amount of time it takes for the batter to rise varies. Some say that you should not let the batter sit for more than one hour or the outcome will result in a chewy consistency. When I use active dry yeast I find that allowing the batter to sit for about two hours is just fine.

fine tarte tiède au chocolat

Pour 6 personnes
Préparation : 20 min
Cuisson : 20 min à 180°C - 5 min à 140°C

Ingrédients :
1 pâte à tarte sablée
100g de Lindt A Cuisiner 70% cacao
4 oeufs frais
130g de beurre
100g + 25g de sucre semoule

1. Garnir un moule à tarte avec la pâte. Enfourner et faire cuire 20 min.

2. Faire fondre le chocolat et le beurre (au micro-ondes ou au bain-marie) puis laisser le mélange tiédir.

3. A part, mélanger au fouet 3 jaunes d'oeuf et 100g de sucre jusqu'à ce que le mélange devienne mousseux. Ajouter le chocolat fondu et mélanger délicatement.

4. Battre en neige les 4 blancs d'oeufs. Y ajouter le sucre.

5. Incorporer délicatement les blancs en neige dans le chcolat et mélanger.

6. Remplir de mousse au chocolat le fond de la tarte préalablement cuit à blanc.

7. Passer environ 5 min au four chaud à 140°C pour saisir la mousse et servir tiède.

pâtes sauce pesto rosso et ricotta

Préparation : 5 min
Cuisson : 10 min

Ingrédients (pour 4 personnes) :
300g de pâtes fusillis
150g de tomates séchées
200g de ricotta
60g d'amandes
40g de parmesan
10 feuilles de basilic
1 gousse d'ail
1 filet d'huile d'olive
sel, poivre

Préparation :
1. Passer au mixeur les tomates séchées égouttées, les amandes, le parmesan, le basilic, l'ail, une pincée de sel, une pincée de poivre et un filet d'huile d'olive jusqu'à obtenir un pesto homogène et onctueux.
2. Ajouter ensuite la ricotta et bien mélanger.
3. Faire cuire les fusillis al dente, les égoutter, y versa la sauce pesto et servir immédiatement.

tarte poires chocolat

6 personnes
Temps de préparation : 30 min
Temps de cuisson : 35 min

Ingrédients :
1 pâte brisée
200g de chocolat noir à 70% de cacao
1 boîte de poires au sirop
6 cuillères à soupe de crème fraîche
1 oeuf
1 jaune d'oeuf
50g de sucre en poudre

Préparation :
1. Préchauffez votre four à 180°C (th. 6):
2. Déroulez la pâte avec le papier de cuisson dans un moule à tarte et piquez-là à l'aide d'une fourchette. Cuisez-là à blanc à 180°C (th. 6) pendant 15 min.
3. Faites fondre le chocolat au bain-marie. Coupez le feau, puis ajoutez le sucre et la crème fraîche.
4. Versez la moitié du mélange au chocolat sur le fond de la tarte.
5. Battez l'oeuf et le jaune d'oeuf à l'aide d'une fourchette. Incorporez les oeufs au reste du mélange au chocolat et versez-le uniformement sur la tarte.
6. Egouttez les poires, coupez-les en deux, puis disposez-les en couronne sur la tarte en les enfonçant légèrement.
7. Faites cuire à 180°C (th. 6) pendant 20 min.

Astuce :
Décorez votre tarte en ajoutant des copeaux de chocolat.

Ingrédients
1 pâte brisée

Préparation
Recouvrir avec des légumes secs le fond de la pâte.
Cuire à 180°C (th. 6) jusqu'à ce que les bords commencent à dorer.
Retirer les légumes secs.

truffes au chocolat

Ingrédients pour environ 60 truffes
250 g de chocolat noir à pâtisser
100g de beurre doux
2 jaunes d'oeuf
50g de crème fraîche semi-liquide
50g de sucre
quelques gouttes d'extrait de vanille

Pour la finition : Du cacao en poudre non sucré

Preparation
Faites fondre 150g de chocolat noir au bain-marie. Hors du feu tout en mélangeant, ajoutez le beurre fondu, les jaunes d'oeuf et quelques gouttes d'extrait de vanille. Portez la crème et le sucre à ébullition puis versez petit à petit sur la préparation chocolatée en mélangeant jusqu'à l'obtention d'une pâte homogène. Mettez le tout au réfrigérateur et faites refroidir jusqu'à l'apparition d'une légère coagulation sur le bord du récipient.

Laissez reposer une heure au réfrigérateur. Formez les boules de même taille à l'aide d'une poche à douille ou d'une cuillère pour crème glacée et les déposez sur du papier sulfurisé. Entre-temps, faites fondre 100g de chocolat. Plongez les boules une par une dans le chocolat fondu puis roulez-les à l'aide de fourchettes dans la poudre de cacao non sucré.

Laissez durcir. Eliminer la poudre de cacao en excès et présentez les truffes sur un plat.

CS: An issue in improv is that people are too polite, too socialized if you will, and adapt too quickly to “society,” i.e. their fellow actors. Personally, I am getting better at making people meet me on my turf. But that sure as hell did not come from improv. That came from working with Ira.

Yeah, with all the different wearable technology, and the way we're analyzing how players move -- it's valuable information when it's used the right way. I try not to think about it when I'm on the court, like, "Oh, my release felt half-a-second slow that time." Or: "I didn't create enough force on that crossover."

But when I'm working out in the summer, being able to analyze the different ways I move, and making it more efficient and explosive -- that all has provided dividends, for sure. It helps. But when you're on the court, you want to be free. You want to react to what's in front of you, and not be all clogged up in your head.

(A l'origine) Evénement dans l'enfance → Jugement par l'autre → Apprentissage d'une pensée sur soi-même liée au jugement de l'autre → Emotion douloureuse → (Plus tard) Répétition d'une situation qui évoque (consciemment ou inconsciemment) le passé douloureux → Pensée irréaliste sur soi-même → Réactivation de l'émotion douloureuse → Renforcement de la pensée irréaliste sur soi-même.
