truffes au chocolat

Ingrédients pour environ 60 truffes
250 g de chocolat noir à pâtisser
100g de beurre doux
2 jaunes d'oeuf
50g de crème fraîche semi-liquide
50g de sucre
quelques gouttes d'extrait de vanille

Pour la finition : Du cacao en poudre non sucré

Preparation
Faites fondre 150g de chocolat noir au bain-marie. Hors du feu tout en mélangeant, ajoutez le beurre fondu, les jaunes d'oeuf et quelques gouttes d'extrait de vanille. Portez la crème et le sucre à ébullition puis versez petit à petit sur la préparation chocolatée en mélangeant jusqu'à l'obtention d'une pâte homogène. Mettez le tout au réfrigérateur et faites refroidir jusqu'à l'apparition d'une légère coagulation sur le bord du récipient.

Laissez reposer une heure au réfrigérateur. Formez les boules de même taille à l'aide d'une poche à douille ou d'une cuillère pour crème glacée et les déposez sur du papier sulfurisé. Entre-temps, faites fondre 100g de chocolat. Plongez les boules une par une dans le chocolat fondu puis roulez-les à l'aide de fourchettes dans la poudre de cacao non sucré.

Laissez durcir. Eliminer la poudre de cacao en excès et présentez les truffes sur un plat.

I believe that when you're up against a challenge, you have to push yourself to the limit. You have to push yourself until you see what your limits are and you see what you're capable of doing and what you're capable of not doing. Sometimes, you push so hard that you break. But then, when you break, you see what you're made of yet again because you have to rebuild yourself again. But I'd never be able to forgive myself had we not made the playoffs. If I did not push as hard as I could have, I would never know how much I had left in the tank, and I would never be able to forgive myself for that.

CS: Exactly. The great tragedy of improv is that most improvisers don’t understand that they are, in and of themselves, the fundamental “offer.” So people practice coming up with stuff and get very good at it. But as far as I can see, it’s futile. Most people can’t stand being on stage and being looked at for even five seconds without having to say or do something.

TAB: So what do you teach about handling this fear?

CS: You have to first simply acknowledge it. Not be ashamed of it. It’s really about accepting yourself, your presence in the world. I am what I am and what I am is here. In front of you. Being in your body is the answer. Feeling yourself. That’s what we call stage presence, charisma.

CS: The way people improvise reflects how they are in life, to a high degree. I don’t see a lot of patience in improv. It’s very rare. There are a couple of guys here in France who do a show called “SLOW.” They really take their time. It’s not that nobody else does it, but it’s rare.

CS: An issue in improv is that people are too polite, too socialized if you will, and adapt too quickly to “society,” i.e. their fellow actors. Personally, I am getting better at making people meet me on my turf. But that sure as hell did not come from improv. That came from working with Ira.
